Layered Greek Dip

The time tested party dip is the 7 Layer Bean Dip. Yes, it is good. Yes, I LOVE avocado, cheese and sour cream. HOWEVER, been there, done that. And now it is BOOOOORRRRRIIIIINNNNNGGGGG! I needed a fresh idea and saw a picture on Pinterest of a Greek layered dip and decided to run with it!

Greek food has so many fresh ingredients and I wanted a light, summer dip that was tasty and delicious. I thought of my favorite ingredients in Greek food and piled it on up and let me just say that this is now my NEW PARTY dish. It is so delicious and such a great appetizer.

Here’s what you need:

16 oz Traditional Hummus
½ cup chopped red onion
1 cup chopped cucumber
1 cup chopped Roma tomatoes
¾ cup chopped, pitted Kalamata olives
1 cup crumbled Feta cheese
1 Tbsp dried oregano
1 Tbsp dried basil
Pita bread or seeded chips

Here’s what you do:

It’s really easy!

Chop your red onion, cucumber, Roma tomatoes, and Kalamata olives.

Layer your 9×13 pan starting with the hummus and spread a nice thick layer (about ½ inch).
Next add your onions, cucumber, tomatoes and olives.

Top your dip with the Feta cheese and sprinkle your dried herbs to cover the top.

Serve with wedges of pita bread or a good seeded chip. I have to tell you, it was SOOOOO good on a soft pita wedge, mmmmmmm. Enjoy taking this to your next party or just eating on a warm summer night!
