BBQ Chicken & Basil Pizza

Pizza is my life. I could eat pizza every. single. day. No joke.

I think this drives my husband a little nuts because my first choice is usually ALWAYS pizza. There is just something about all of the delicious combinations that you can you make on a pizza. Oh, and the cheese. Have a I mentioned that I LOVE cheese. Yes, LOVE.

I first made this pizza when my sisters and I got together dinner for a girls night. We each brought our own toppings and a bottle of wine and we just had fun creating these ooey, gooey, cheesy, pies! It was such a fun idea because we had 5 different pizzas to taste and choose from. *Just an idea for fun night with friends!*

This BBQ Chicken & Basil Pizza is a favorite to make because it is just a little bit different than the norm. Plus, if you have leftover BBQ chicken you can throw it on this tasty dish!

Here’s what you need:

2 Boneless Skinless Chicken Breasts (about 1 lb)
1 ½ Cups of Your Favorite BBQ sauce (preferably Texas BBQ sauce with a strong tomato base)
8 oz Fresh Mozzarella
2 Cloves of Garlic
Favorite Pizza Dough (I used Garlic Herb from Trader Joes or make your own traditional dough)
Red Onion
Parmesan cheese
Fresh Basil

Cover chicken with BBQ sauce. BBQ chicken on grill. Set aside to cool.

Preheat oven to 425 degrees

Oil a pizza pan or a cookie sheet. Spread dough out over the pan. Brush the dough with olive oil all the way to the edge.

Prep:

Mince garlic and mix with 1 cup of BBQ sauce.

Slice mozzarella in to thin rounds.

Thinly slice red onion.

Wash basil and give a rough shop.

Slice chicken

Building Your Pizza:

Spread out the BBQ sauce mixture over the dough.

Layer toppings on pizza in the order of mozzarella, chicken, red onion, basil.

To finish off the pizza, grate a fine layer of Parmesan cheese.

Bake for 12-15 minutes or until cheese is bubbly!

Your kitchen will smell AMAZING between the fresh dough, garlic and bbq’d chicken. MMMM mmmm MMMMM!
